This recipe for vegan pesto is simple, light, fresh, and delicious! You can use this as a sandwich spread in paninis, use it on top of grilled veggies, or make a pesto pasta!
Ingredients:
1 small lemon (juiced)
1/2 cup of extra virgin olive oil
1/2 cup of pine nuts
2 small cloves of garlic
1/2 cup of nutritional yeast
pinch of freshly cracked pepper and sea salt
Directions:
Place all ingredients in a food processor and blend until smooth. Simple and easy!
